Fair Trade principles and free from agro-chemicals

My cacao supplier is a small, family-run business based in Devon, UK.  In 2001, they began working with a Peruvian Co-operative, created to offer the highest quality raw materials and foods.  The Co-operative works with small farmers to cultivate, process and market products grown without the use of harmful agro-chemicals, and careful steps are taken to process products as little as possible and at low temperatures, to preserve their nutritional properties. 


The important principles behind this Peruvian Co-operative are:
  • Quality rather than quantity
  • Fostering Andean biodiversity
  • Promoting an Organic system of production
  • Income distribution among the people who participate as suppliers, transformers, and traders
  • Social responsibility, following the principles of fair trade



They work in association with small farmers, generating employment for the local population.  They also provide training and financial support, thereby raising the living standards of the small farmers, while at the same time increasing their crop yield.
Raw

The term ‘raw chocolate’ refers to a product made from cacao beans which have remained un-roasted.  However, all cacao beans must be fermented after picking to make them safe for human consumption and this process happens naturally at temperatures that may exceed those normally associated with raw food.

During fermentation, which takes 4-5 days, the sugar in the pulp is converted into acids that change the chemical composition of the beans. Fermentation activates enzymes that create the flavour precursors to chocolate as we know it and breaks down the phytic acid so the cacao bean is safe for us to eat.

Despite the need for this essential fermentation process, by missing out the roasting of the beans (at up to 150c) and ensuring temperatures are kept as low as possible during fermentation and subsequent chocolate production, many of the wonderful nutrients present in the cacao beans are retained.
